This dish is deceptively easy, tasty and healthy. Make it with any vegetables you may have to hand and enjoy it with a simple salad.

Ingredients

2Bacon rashers, roughly chopped (Main)
1 smallOnion, finely chopped
50 gGrated cheese
3Eggs (Main)
200 mlMilk
½ tspDried oregano
¼ tspCayenne pepper
1 bunchAsparagus, or beans (Main)
8Cherry tomatoes, halved
1 tspOlive oil

Directions

  1. Heat the oven to 180C. In a frying pan over a high heat, saute the bacon until it browns and begins to go crisp. Reduce the heat to low, add the onion and cook for a few minutes until soft and translucent.
  2. Combine the cheese, eggs and milk in a bowl. Add the , oregano and cayenne pepper and season with a good pinch of salt and pepper.
  3. Add the onions to the egg mixture and stir to combine.
  4. Pour the mixture into a greased quiche or tart dish with the tomatoes and asparagus or beans. Bake for 35-40 minutes until golden brown and just firm in the centre.
