There’s really nothing better for lunch than this crunchy and melty Mushroom Triple Cheese Grilled Cheese recipe! With just 5 minutes of prep time, you’ll be digging in in no time!

I can’t believe there’s not a single grilled cheese recipe post on this blog yet! Seriously, myself. Get yourself together a bit. It’s one of my favorite quick lunches to whip up – and the kids go crazy for it, too! I love to add a little bit more than cheese to our sandwiches to make them more filling (and let’s be honest… less greasy, I like myself some cheese, button a greasy sandwich).

That’s why I use some mushrooms and roasted red peppers here, as well as a mix of melty cheese (mozzarella), sharp cheese (cheddar) and less greasy cheese (goat’s cheese). They make the perfect blend in this recipe!

Ingredient notes

  • butter: if you’re using a very soft bread, or if you don’t have any butter – just use mayo instead! It really works quite well for a grilled cheese.
  • mushrooms: either use one or two large portobello mushrooms, or a few brown button ones.
  • bread: I prefer a white, crusty sourdough here – but go with your favorite bread for grilled cheese, if you like.
  • goat cheese: not a fan? Just use a cream cheese spread instead.

1 – Grill the mushrooms

I prefer grilling my mushrooms here, because they need no fat added this way. You can also sauté them in butter, if you prefer.

2 – Assemble sandwich and grill

This recipe is super quick and easy, so all that’s left to do once the mushrooms are ready is to assemble and grill the sandwiches. For the best, crustiest finish on the sandwich, spread the outside of the bread slices with butter before you assemble. I like going with a simple grill pan with a heavy cast iron lid on top because I try to keep my kitchen pretty minimalistically stocked. If you have a special panini press or the like – absolutely use it here!

Tips and tricks

  • Don’t skimp on the butter, if you do your bread could stick to the pan and ruin your sandwich.
  • Make sure to pat the red pepper really dry with paper towels, otherwise the sandwich could come out soggy.
  • I use pre-sliced mozzarella and grated cheddar cheese when I make this, because I find they melt the best in a grilled cheese.

Why do you put butter on grilled cheese?

Spreading the outside of the sandwich with butter or mayo before grilling helps to make the bread more golden-crispy, prevents sticking – and just tastes really good, too.

Can you premake a grilled cheese sandwich?

I do not recommend making this ahead of time. It is best eaten hot straight out of the pan! If you do make it ahead, just be aware that it can turn soggy, and the cheese will be solid again.

Ingredients

  • 2 portobello mushrooms OR a few brown button mushrooms
  • salt & black pepper to taste
  • 2 slices thick crusty bread sourdough is perfect
  • 2 teaspoons softened butter OR mayo
  • 2 slices mozzarella cheese
  • 2 heaping tablespoons shredded cheddar cheese
  • 1 teaspoon oregano leaves can also use a sprinkling of Italian seasoning; or other fresh herbs
  • 1 large roasted red pepper (from a jar) halved and patted dry
  • 2 heaping teaspoons creamy goat cheese or use a cream cheese spread

Instructions

  • Grill mushrooms until softened and cooked through, about 4 minutes per side. Season with salt and pepper and set aside.

  • While mushrooms are cooking, spread butter on one side of each slice of bread. Buttered side facing down, top one slice of bread with one slice mozzarella, all of the cheddar, half the herbs and the red pepper.

  • Once they are ready, add the mushrooms on top and distribute the goat cheese over them. Top with the remaining slice of mozzarella; then sandwich with the second slice of bread, buttered side facing up.

  • Grill over medium to medium-high heat for about 3-5 minutes per side or until the bread is golden brown and cheeses have melted. For best results, press sandwich in pan with something heavy (like a cast iron lid) or press down with a panini press.
