This Keto Pot Roast Instant Pot Recipe is seriously one of the best recipes ever! So easy to make and full of flavor; it will be a hit with the entire family! I’ve seen this recipe many times, but once I tried it, I was hooked.

HOW TO MAKE POT ROAST KETO-FRIENDLY

Pot roast isn’t keto-friendly on its own. However, there is a way to make pot roast keto-friendly. Leaving out the potatoes can significantly reduce the number of carbs in the pot roast.

I love finding ways to make it easier to cook healthy meals for my family. When my days are filled with four kids, homeschooling, and blogging, the time flies by. This week has been particularly busy, so I thought I’d try making a keto chuck roast Instant Pot recipe tonight for dinner.

I was blown away by how amazing this Instant Pot Keto Pot Roast recipe tasted. The flavor is far better than slow cooking all day in a crockpot since we were in a hurry. The flavor tastes like it was infused into the meat and is beyond fork tender.

This is basically the same recipe as my Keto Pot Roast for the Crock Pot but altered for the Instant Pot.

Ingredients:

  • Boneless Beef Roast– If you want the meat to be flavorful, pick a cut of beef with higher fat content. Cuts of meat that don’t have a lot of fat tend to be drier and not as tender. Chuck Roast is my favorite.
  • Ranch dressing mix or homemade– I love using ranch dressing mix in my pot roast because it adds a nice tangy flavor.
  • Xanthan Gum is used to thicken the sauce and make a gravy-like consistency.
  • Garlic Cloves– Add a ton of flavor to the dish.
  • Pepperoncini Peppers– This is a “Mississippi Style” pot roast that calls for pepperoncini peppers. If you don’t like pepperoncini peppers, feel free to leave these out or use banana peppers instead.
  • Beef Broth– This keeps the roast from getting dry and losing flavor.

Steps to Making Keto Pot Roast Instant Pot Recipe

Step 1: Press the saute button on the Instant Pot and allow it to get hot. Add olive oil and sear pot roast on all sides.

Step 2:Remove roast from Instant Pot and use beef broth to deglaze the pan by stirring with a wooden spoon.

Step 3:Transfer beef roast to Instant Pot, add all other ingredients except for the Xanthan Gum, and bring to a boil.

Step 4:Turn Instant Pot off, then secure the lid in place. Press manual high pressure and use the up button to program for 90 minutes.

Step 5: The Instant Potwill take several minutes to come to pressure. When it does, it will begin to count down from 90 minutes.

Step 6: Once the time is complete, let it naturally release for 15 minutes, then quick release.

Step 7: Once the pin has dropped, remove the lid and use a fork to shred it.

Step 8:Turn Instant Pot to warm and sprinkle 1/2 teaspoon of Xanthan Gum to thicken the gravy. Allow the roast to sit for 10 minutes or until the gravy has thickened before serving. Do not add more Xanthan Gum, as it will make the pot roast slimy.

What Are the Best Cuts of Meat for Keto Pot Roast?

The best cut of meat for Keto Pot Roast would be chuck roast since it has more fat. If you’re looking for a leaner cut of beef, a rump or round roast is best because it has fewer fatty pieces yet is tender enough to render flavor. Lastly, you can use brisket, but it’s a bit grainier than chuck roast.

What If My Meat Isn’t Tender After Cooking?

To prevent this from happening, make sure you cook the roast for long enough. If you take it out of the instant pot too soon, the meat will not be tender and fall apart like a traditional pot roast. You can either put the top on again and set it to manual high pressure for 5 min or press the saute button and allow it to boil until it falls apart.

Why Should You Sear the Meat Before Cooking?

Searing the meat before putting it in the instant pot brings out aton of flavor. I have found that making a pot roast in the slow cooker does not require this step, but it is essential when making a pot roast in the Instant Pot.
