    This strawberry fudge is refreshingly sweet and loaded with little bits of strawberries. This easy fudge recipe only requires 4 ingredients and is ready to spread in the pan in about 5 minutes.

    If you love the sweet taste of strawberries and cream this pretty pink fudge is perfect for you. It is so soft and creamy and has little pieces of strawberries speckled throughout.

    This isn't an ordinary fudge flavor that you'll find in most fudge shops along the boardwalk at the beach. But it should be!

    It blends vanilla fudge with strawberry sauce to make a refreshingly good fudge thatwould be great to serve along withlemon fudge at a summer party. Top the strawberry fudge with a layer of chocolate fudgeor a layer of chocolate ganache for a really decadent treat or if you prefer even more chocolate try our Chocolate Covered Strawberry Fudge. It has whole strawberries inside chocolate fudge.

    This easy strawberry fudge recipe requires just four ingredients and can be made in under 10 minutes.

    Ingredients used to make easy strawberry fudge:

    • white chocolate
      • I used Nestle Premier White Morsels which are actually a confectionery coating (similar to white chocolate but made using palm kernel oil instead of cocoa butter).
      • You can use pure white chocolate chips (made with cocoa butter) or any white confectionery coating like Candy Melts, Ghirardelli White Melting Wafers, Merckens White Wafers, almond bark, or CandiQuik.

    NOTE: If using pure white chocolate (with cocoa butter listed in the ingredients) you will need to use 28 ounces versus 24 ounces of the white confectionery coating.

    • strawberry ice cream topping
    • lemon juice
      • A bit of freshly squeezed lemon juice helps to balance the sweetness of this fudge.
    • salt
      • A pinch of salt also helps balance the sweetness.

    How to make strawberry fudge:

    • Start by melting white chocolate chips either in the microwave or on the stove.
      • How to melt white chocolate in the microwave:

        • Pour the white chocolate chips into a microwave-safe bowl and heat at high power for 1 minute then remove and stir.
        • Heat for another minute then allow the bowl to sit in the microwave for 3 minutes.
        • Stir vigorously until all the chips are melted.
        • If needed heat on high power for 15-second increments stirring after each until the white chocolate is completely melted.
      • How to melt white chocolate on the stove:

        • Create a double boiler by setting a saucepan filled with 1 inch of water over low heat on the stove.
        • Place a bowl on top of the pan so that it goes into the pan and fits around the edge snugly but does not touch the water.
        • Pour the white chocolate chips into the bowl and allow the white chocolate to melt slowly, stirring often.
        • Once about three-quarters of the chips are melted remove the bowl, dry the bottom, and stir the chocolate until melted.
    • Pour the strawberry ice cream topping into the white chocolate along with some freshly squeezed lemon juice and a pinch of salt and stir until well combined.
    • Spread the fudge in a prepared pan, cover, and chill for 3-4 hours until firm.
      • Line an 8-inch square pan with non-stick tin foil for easy removal.
      • Or you can line the pan with parchment paper or regular tin foil sprayed with some baking spray.
      • You can also use an 8 x 4-inch loaf pan if you'd like pretty pink slices of homemade strawberry fudge.
    • Cut the fudge into squares.

    • 24-28 ounces* white chocolate chips
    • 11.75 ounces Smucker's Strawberry Topping
    • 1 teaspoon freshly squeezed lemon juice
    • 1 pinch salt

    NOTE: If using white confectionery coating chips (no cocoa butter listed in the ingredients) use 24 ounces, if using pure white chocolate (with cocoa butter listed in the ingredients) then use 28 ounces.

      Instructions

      1. Melt the white chocolate chips in the microwave or on the stove.

      Microwave method:

      1. Pour the white chocolate chips into a microwave-safe bowl and heat at high power for 1 minute then remove and stir.

        Heat for another minute then allow the bowl to sit in the microwave for 3 minutes.

        Stir vigorously until all the chips are melted.

      Stove-top method:

      1. Pour the strawberry topping, lemon juice, and pinch of salt into the melted white chocolate.

      2. Create a double boiler by setting a saucepan filled with 1 inch of water over low heat on the stove.

        Place a bowl on top of the pan so that it goes into the pan and fits around the edge snugly but does not touch the water.

        Pour the white chocolate chips into the bowl and allow the white chocolate to melt slowly, stirring often.

        Once about three-quarters of the chips are melted remove the bowl, dry the bottom, and stir the chocolate until melted.

      3. Stir until well combined.

      4. Pour into a non-stick tin foil-lined 8-inch square baking pan.

      5. Cover and chill for 4 hours or overnight until firm.

      6. Remove and peel off tin foil before cutting into 36 squares.

      7. Wrap in wax paper and place in a zip-top bag or in an airtight container and store in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.

      Recipe Notes

      It's important to use Smucker's Strawberry Ice Cream Topping to make this dessert as it is written. If you use another brand of ice cream topping or homemade strawberry sauce, you may need to adjust the amount of white chocolate in the recipe in order for your strawberry fudge to firm up properly.

      Store this fudge in an airtight container in the refrigerator for up to 2 weeks.

      You may also freeze the fudge for up to 3 months. Wrap it well in wax paper, then place it in an airtight container or zip-top bag before freezing. Thaw the fudge at room temperature for several hours before opening the package to prevent condensation from forming on the fudge.

        So the flavor of this is great but it did not harden. At all. The only change I made was to use real white chocolate. Any suggestions?

          I am sorry to hear it didn't set up properly. I am going to make the recipe again using pure white chocolate to see if it needs to be adjusted when using the pure white chocolate and will post the follow up here as soon as I am able.

          I'd let the fudge sit at room temperature over night to see if it drys enough to cut. If not, you could melt some more white chocolate, allow it to cool slightly, then knead it into the fudge. I have used this technique when making modeling chocolate (a mixture of chocolate and corn syrup) and it works. If the fudge starts to feel greasy, allow it to cool for a while (up to 30 minutes) then knead it again. You want to work all the oil back into the fudge. Press the fudge into the pan again then you should be able to cut it about 30 minutes later.

          I just finished experimenting with this recipe using pure white chocolate and it does indeed require a higher white chocolate to strawberry sauce ratio. I first made the recipe as it, using 24 ounces of pure white chocolate and 1 jar of strawberry sauce and the lemon juice and inch of salt and, like you, found it was too soft to hold it's shape. It did taste amazing though!

          So, I took 4 more ounces of pure white chocolate, grated it using a cheese grater, then melted it at 70% power for 15 second burst until it melted (it took 4 burst of power in my microwave). I then stirred the melted white chocolate into the soft fudge and pressed the fudge back into my pan and chilled it for a little over an hour. I was able to cut it easily and it held it's shape.

          I will go back and add a note to the recipe accommodate this. I am so sorry I didn't think to try this before. I hope you are able to fix your fudge!

        Just mixed a large batch of the fudge and the moment I added the lemon juice, the candy melts seized. Money down the drain ☹️ So disappointed since recipe said it was ok to use candy melts.

          I am so sorry to hear that happened. Did you blend the white candy melts and strawberry sauce together before adding the lemon juice? If you just added the lemon juice to the melted candy melts without the strawberry sauce it would definitely seize it up. Once the candy seized up you could have added the strawberry sauce and heated it and it should have smoothed out again. I'm sorry you had to through it away.

          Both are smooth and creamy. The strawberry fudge has a more natural strawberry flavor than the frosting fudge, but both are quite delicious.

        Do you think this would work by using semisweet chips, and seedless raspberry fruit spread, such as Smuckers Simply Fruit or Smuckers Squeezable Fruit Spread?
        I'm really looking for an all-chocolate fudge with raspberry.

          I think you could make the fudge using the fruit spread, but dark chocolate is much more firm than white chocolate, so you'd need to adjust the ingredient amounts. Let me make a batch using some jam that I have on hand to see what quantities you would need. I'll post later today with my answer.

          So, after some experimenting, I found that you can mix 18 ounces of semi-sweet chocolate with 11.5 ounces of raspberry preserves (jam, or fruit spread). Just be sure to use seedless jam for the creamiest fudge. So, it's essentially 1.5 times the amount of chocolate to jam. If you use an 8-ounce jar of jam, you'll use 12.5 ounces of chocolate.

          When I made the fudge using 18 ounces of chocolate and 11/5 ounces of preserves and poured it into an 8-inch square pan, it made a rather thin fudge. You might want to pour it into a loaf pan instead.

          The fudge is delicious!!!

          You can use jam or preserves to make fudge. I haven't made this particular fudge using strawberry jam or preserves but we do have two other easy fudge recipes that were made using jams.

        Hi, I made this yesterday just as the recipe stated. It did beautifully and did harden in the refrigerator but when you take it out of the refrigerator it softens a little too much. Any suggestions to stabilize the firmness would be greatly appreciated. Thank you.

          Hi Robyn,

          This fudge is somewhat soft but it should hold its shape once cut into squares. Being it has strawberries in it, you can store it in the refrigerator which will keep it more firm. Also, once you bring it out and allow it to sit on the counter for a while, the edges will dry out a bit which will also help it to maintain its shape.

        I made this yesterday using homemade strawberry sauce and white chocolate. It never set so I put it in the freezer overnight and it was still more the consistency of a sticky thick dough than fudge when I removed it from the pan. It tastes like strawberry ice cream. I think it’d be good spread on a sugar cookie but I wouldn’t say it resembles anything I’d call fudge. Sorry.

          The homemade strawberry sauce might not have the same ingredients as the jar of strawberry sauce that I used to make this strawberry fudge. The thickening agent could be different which would completely change the recipe. I'm sorry it wasn't a successful recipe. It might have worked by adding more white chocolate but not knowing what's in your strawberry sauce recipe, I can't really give you exact amounts.

        OK, I know this is weird, but I had a dream that I made plum fudge and thought I would try it for real. Couldn't find a recipe but thought I would try this one using the linked strawberry sauce recipe to make plum sauce using plums instead of strawberries. I used the same white chocolate chips you did, but my fudge did not harden. It was delicious though. I might try kneading some more of the melted chips in as you suggest and see if it sets up.

          Plum fudge sounds delicious. I'm guessing the reason the fudge did not set properly had to do with the use of the homemade sauce. It might not have the same ingredients as the jar of strawberry sauce that I used to make this strawberry fudge. The thickening agent could be different which would completely change the recipe. I’m sorry it wasn’t a successful recipe. Adding more white chocolate could definitely help. If you make it again, be sure to increase the amount of white chocolate by a few ounces.
