Ingredients and Variations
Brownie Base:
Sugar – The combination of granulated and brown sugar helps these brownies stay deliciously moist. In a pinch, all of one type could also be used.
Butter – There is no substitute for real unsalted butter, so no sub-ins allowed here! But if all you have on hand is salted butter, simply omit the salt in the recipe
Cocoa – Use Dutch-processed cocoa in this recipe for it’s smooth, rich flavor. But natural cocoa will also work.
Flour – All purpose flour is perfect for brownies, but for a gluten free option sub in gluten free flour at a 1:1 ratio.
Chocolate Ganache:
Chocolate Chips – Use quality chocolate chips! Dark chocolate and semi sweet chocolate chips will work as well.
Cream – Heavy cream blends with the chocolate chips when heated for a decadent topping.
Oil – The coconut oil helps create that glossy finish, but regular cooking oil will also work in a pinch.
How To Make Cosmic Brownies
- Preheat oven and prepare baking pan.
- Combine melted butter and sugars together. Mix in eggs and vanilla, then fold in flour, cocoa powder, cornstarch and salt.
- Fold batter into pan and bake as directed in the recipe. Cool.
- Heat chocolate chips and cream until warm, mix until smooth. Add coconut oil.
- Spread ganache over cooled brownie base. Top with sprinkles.
Tips For Cosmic Brownie Success
- Line baking pan with parchment paper for quick and easy removal. This step also makes the brownies super easy to slice.
- To achieve the glossy ganache coating, be sure to add the coconut oil in the last step!
- Mix in addin’s such as chocolate chips, nuts, coconut, cream cheese or a swirl of peanut butter for extra interest.
- For a more chewy texture, slightly under-bake the brownies. And the small addition of cornstarch will help keep the brownies moist and delicious!

Best Storage Solutions
Be sure to cool Cosmic brownies well before storing.
Cut Cosmic brownies into squares and place them in an airtight container. If there is more than one layer, be sure to separate each layer with parchment paper.
Store brownies at room temperature for up to 3 days, or refrigerate for up to a week.
Cosmic brownies can also be frozen for up to a month. Freeze separated and in a single layer, then move to a container. Separate with parchment paper if possible.
Thaw at room temperature, or enjoy slightly frozen for a cool treat.

Ingredients
- ½ cup butter
- ½ cup sugar
- ½ cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- ¾ cup flour
- ⅔ cup cocoa
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Ganache Frosting
- ½ cup heavy cream
- 1 cup chocolate chips
- 1 teaspoon coconut oil
- colorful sprinkles , optional
Instructions
Line an 8"x8" pan with parchment paper. Preheat oven to 350˚F
In a medium bowl, whisk melted butter and sugars together. Add the eggs and vanilla. Mix well.
Stir in the flour, cocoa, cornstarch and salt. Mix until no clumps remain. Drop the batter by spoonfuls into prepared pan and bake for 20-25 minutes or until a toothpick comes out mostly clean. Cool on rack, then in the refrigerator for 1 hour.

Ganache Frosting
In a microwave safe bowl, add chocolate chips and cream. Heat for 30 seconds, stir and heat for 30 seconds again. If needed, heat for 2 – 20 second intervals, until chocolate is melted. Add coconut oil and mix.
Pour ganache frosting over cooled brownies, and allow to set for 5 minutes. Sprinkle with candies and refrigerate 1 hour or until firm. Remove from pan before slicing.
Notes
- Use parchment paper to line baking pan.
- Add oil to achieve the glossy ganache coating.
- Add mix-in’s to the brownie base if desired.
- Do not over-bake brownie!
- Cool Cosmic brownies completely before storing.
- Store at room temperature for up to 3 days, or refrigerate for up to a week. Brownies can be frozen for up to a month.
